When I was baking a cake last week, I realised that I was running of buttermilk, which prompted me to search for a substitute… After I found it I wondered how many people out there who actually want to know about this.. INGREDIENT AMOUNT SUBSTITUTION
Baking Soda 1/2 teaspoon 2 teaspoons baking powder
Sour Cream 1 cup 1 cup plain yogurt

3/4 cup buttermilk or plain yogurt + 75 grams melted butter

1 cup creme fraiche

1 tablespoon lemon juice or vinegar plus enough full cream milk to fill 1 cup (wait 5-10 minutes before use)

Glucose, liquid 1/2 cup 1/2 cup light corn syrup
Golden Syrup 1 cup 1 cup treacle

1 cup corn syrup

Lemon Juice, freshly squeezed 1 tablespoon 1 tablespoon bottled lemon juice

1 tablespoon fresh lime juice

Lemon, Zest 1 teaspoon 1 teaspoon orange or lime zest
Lime, Zest 1 teaspoon 1 teaspoon lemon or orange
Mascarpone Cheese 1 cup 1 cup Creme fraiche

3/4 cup cream cheese beaten with 1/4 cup cream

Buttermilk 1 cup 1 tablespoon lemon juice or vinegar plus 1 cup milk (wait 5-10 minutes before use)

1 cup plain or low fat yogurt

1 cup sour cream
1 cup water plus 1/4 cup buttermilk powder

Orange, Zest 1 teaspoon 1 teaspoon lemon or lime zest

1 teaspoon finely chopped candied orange peel

Caster Sugar 1 cup 1 cup white sugar, processed in food processor until very fine
Vanilla Bean 1 bean 2 – 3 teaspoons pure vanilla extract
