This recipe is very close to my heart.  When my dad was still alive with his cancer, his specialist in Jakarta asked him not to consume any dairy..  He loves chocolate cake or cupcake, so I searched for an eggless chocolate recipe.  After a few changes, here it is everyone…

Ingredients:

  • 1 cup Caster Sugar
  • 1 1/2 cup Plain Flour
  • 1/2 tsp salt
  • 3 tbsp cocoa powder
  • 1 tsp baking soda
  • 6 tbsp vegetable oil
  • 1 tbsp vinegar
  • 1 tsp vanilla extract
  • 1 cup water

Steps:

  1. Mix sugar, flour, salt, cocoa & baking soda with a fork.
  2. Make 3 wells in the dry ingredients.  In the 1st put the oil, in the 2nd put the vinegar and in the 3rd put the vanilla.
  3. Pour the water over the entire mixture, thoroughly mix with a fork.
  4. Bake in a 175 degree centigrade (340 fahrenheit) oven for 20-25 mins or until the skewer comes out clean from the cake.
